I was so excited that I made this I had to share it
I have never made a
- Lemon meringue pie
on my own before because no matter how many times I have tried in the past I couldn't make meringue. but this time I think I did.
hooray :)

It collapsed abit don't know why maybe someone can tell me?
The base
Just digestive biscuits and butter. It was quite messy to make, I don't really like the pastry on pies that is why I did the biscuit base.
The filling
lemon rind, lemon juice, cornflour, water,egg yoke and sugar.
The top
egg whites, sugar and cornflour to make it shiny.
Straight from the oven
Yum
